Poached pears with a pomegranate-port reduction

Inspired by a giant bag of pears (thanks to Costco!) and a desire to make a non-traditional dessert for Valentine’s Day, we tweaked a poached pears recipe with some pomegranate juice and port wine.  By using these unique ingredients, we were able to reduce the amount of white sugar we used (of course, there IS some sugar!).

Instructions

  1. Bring port wine, water, pomegranate juice, sugar, and white zinfadel to a low boil until sugar dissolves. If you don’t want to use port wine or white zin, use 3 cups of water, 3 cups of pomegranate juice, and 1 cup of sugar
  2. Peel, core, and slice the pears into quarters and put them the saucepan
  3. Cover this with a round of parchment paper the size of the saucepan with a small hole in the center. This will allow the pears to breathe while keeping them fully submerged. Keep on a low simmer for about an hour
  4. Test for tenderness with a fork, pears should be tender but not mushy. Drain and serve with ice cream, a little bit of the juice, chocolate sprinkles, or our recent favorite: a pomegranate-port reduction. Be creative!
