Home made granola with dried mulberries

Inspired by the home-made granola we had at Blunch a few weeks ago, we wanted to make a healthy and wholesome granola that would work well with Greek yogurt. Recently, we have been having steel-cut oatmeal for breakfast and wanted to try something new. The fun thing about granola is that you can add so many different things to make it delicious and your own. We wanted to make a version that is healthy and easy to make so that I can replace the Bear Naked Granola we currently use occasionally. We used toasted almonds, Turkish dried mulberries (from our Turkish vacation last year!), sunflower seeds and walnuts. The great thing about using mulberries is that for a fruit, they have unusually high levels of iron and protein! Love the overall crunchiness of the granola. We were surprised at how easy this was to make and will be sure to try to make it monthly!

Ingredients
- 1/3 cup shelled walnuts crushed
- 1/3 cup sunflower seeds
- 1/3 cup almonds slivered
- 2.5 cups rolled oats
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons vegetable oil
- 1/4 cup honey
- 1/4 cup brown sugar
- 1/2 cup mulberries dried
Instructions
- Preheat oven to 375 degrees
- Line the baking sheet with parchment paper
- Roast the nuts (sunflower seeds, walnuts, almonds) on low heat for 10 minutes. Stir occasionally. While roasting, you can complete the the next 3 steps
- Combine oats, salt, and cinnamon, set aside in a large bowl
- Beat the honey, brown sugar, vanilla, and oil into a paste
- Using your hands (it gets messy!), combine the paste thoroughly with the oat mixture. Some clumps are ok and encouraged
- Spread evenly on the baking sheet and put in oven for 10 minutes
- After 10 minutes, flip the granola over with a steel (this is important) spatula. Spread the sunflower seed, almond, walnut mixture evenly over the oats
- Bake for an additional 8 minutes, and let cool to room temperature. (note: optionally, at this step, as soon as you take it out of the oven, you can set aside some of the granola and stir in chocolate chips — it’s amazing as it melts in and gets all gooey)
- When at room temperature, stir in mulberries, and seal in an airtight container. It will stay fresh for up to 1 week
