Brie, apple, and walnut omelettes

Inspired by a recent trip to Trident Booksellers & Cafe on Newbury Street for Sunday brunch, we decided to start the New Year day with this delicious breakfast! The secret to this recipe, in my opinion, is the mulling spices. I was looking for nutmeg, cinnamon, and related ingredients to complement the brie and the apples, but stumbled upon a packet of mulling spices we use for cider or wine and viola — it worked really well!

Ingredients
- 2 eggs
- 3 egg whites
- 1/4 cup shelled walnuts
- 1 green apple
- 2 oz brie sliced
- 1 teaspoon mulling spices
- salt to taste
- pepper to taste
Instructions
- Roast the chopped walnuts until brown and crush into small pieces
- Whisk the eggs/egg whites with salt, pepper, and mulling spices
- Slice the green apples and brie into thin slices
- Put about 1/3 of the eggs on the pre-heated sauce pan and while cooking, sprinkle the walnuts, place the slices of brie and apple in the eggs
- Wait until the bottom has fully cooked, and flip the entire omelette
- Cook for under a minute, flip, and serve on a plate, open faced!
