Banana steel cut oatmeal brûlée

Inspired by steel cut oatmeal we had for breakfast at the Westin Cape Town, we were tempted to replicate the same delicious taste at home. This was our first attempt at using our new brûlée torch set, and we’re looking forward to more tries in the near future!

Ingredients
- 1 banana chopped
- 1 cup steel cut oatmeal
- 2.5 cups water boiling
- 1.5 cups skim milk
- 4 ramekins
- 8 teaspoons brown sugar
Instructions
- In a deep pot, roast the steel cut oatmeal for about 5 minutes until you can smell a slight nuttiness and it turns golden brown.
- Pour the boiling water in the pan and cook for 20 minutes, stir occasionally.
- While stirring, pour in the milk and stir frequently for the next 8 to 10 minutes until it becomes porridge-like consistency.
- Divide evenly into ramekins. Slice the banana into 1/8″ slices and layer on top. Sprinkle about 2 teaspoons of brown sugar evenly per ramekin and lightly use your brulee torch to melt the sugar. Alternatively, you can broil the ramekins for ~2 minutes in the oven (watch carefully)!
